Hyde is dead, long live Campo Mammoth

Mammoth Mountain introduces new restaurant in The Village

The Village dining scene will change this winter with the opening of “Campo Mammoth,” the newest offering by chef Mark Estee, according to a news release issued by Mammoth Mountain Ski Area Wednesday night.

It is modeled, the ski area said, on Campo Reno, named one of Esquire’s best new restaurants in America.

The new Mammoth location, in the old Hyde space, will introduce Estee’s commitment to organic and seasonal ingredients as well as an emphasis on items that lend themselves well to families and to skiers and boarders in search of après ski fare.

Campo, which loosely translated means “gathering spot” or “meeting place,” will offer handmade pasta and authentic Napoletana style pizza made by a chef who is arriving in Mammoth from Italy.

The menu emphasizes rustic cuisine and pays homage to Estee’s “Whole Hog Philosophy,” digging deeper into the fuller flavors produced from using every portion of every ingredient.

The new restaurant will continue to build upon his relationship with farmers, fisherman, and ranchers to deliver the freshest food available, a ski area spokesperson said.

In keeping with its location at the bottom of the ski hill, the restaurant’s spotlight will be on sharable après ski items. Diners can finish their day on the slopes with Italian or California wines or specialty cocktails. It also will feature outdoor couches in front of the fire pits.

Campo Mammoth, unlike Hyde, is a family-style restaurant.

“We’re going to give families some action,” says Estee in the press release.

“Whether it’s an outside table with Play-Doh’ for kids, being able to look in the window and see the pasta being made, or coming in to the restaurant, looking up over the counter and watching the pizzas being made and seeing the fire cooking. We’re going to liven it up and make it less formal.”

The ski area said the atmosphere of Campo “will pay tribute to Mammoth while at the same time holding true to what gives Campo the feel of a neighborhood restaurant such as breaking up the room into cozy dining areas with different styles of seating.”

Estee is opening Campo Mammoth in partnership with Levy Restaurants, which operates culinary venues as well as the food and beverage operations at Mammoth Mountain. When Levy decided to open a restaurant at Mammoth, the ski area spokesperson said, they hand-picked Estee as the person to do it right.

Estee was the co-owner of Moody’s Bistro, Bar & Beats in Truckee and has served as executive sous chef and chef de cuisine at the Lone Eagle Grille at Lake Tahoe. He also was executive chef of the Lahontan Golf Club community.

Most recently, Estee opened Campo in downtown Reno.
